- 1 medium onion, minced
- 6 slices bacon, diced
- 2 garlic cloves, minced
- 1 1⁄2 lbs lean ground beef
- 2 eggs, lightly beaten
- 4 tablespoons bottled horseradish
- 1⁄2 cup old fashioned oats
- 1⁄3 cup grated parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon celery seed
- 1 teaspoon dill seed
- 1 teaspoon dried thyme
- 1⁄3 cup tomato sauce or 1/3 cup ketchup
- 2 tablespoons brown sugar, packed
directions
- Saute the onion with bacon and garlic until golden.
- With hands gently combine meat, bacon-garlic-onion mixture, eggs, horseradish, oats, parmesan cheese, and spices. Knead gently but thoughtly until mixture is very light and fluffy.
- Heat oven to 350.
- Pack the mixture into 2 quart rectangular glass loaf pan, leveling the top gently.
- Spoon tomato sauce or ketchup over the top of the loaf and sprinkle with the brown sugar.
- Bake loaf for 1 1/2 hours. Let cool 30 minutes before slicing.
- You can also cool completely, cover tightly in plastic wrap, chill overnight. Using thin knife, slice the loaf into thin slices for sandwiches.

AMAZING. I have learned not to ask my DH what he would like for dinner as he will always say meatloaf. So when he requested it tonight I wanted to find a new recipe as im tired of my old one. AMAZING. This was so delicious. I had to hide a slice of it to send in his lunch tomorrow as the family would have eaten it all.
