  • Saute the onion with bacon and garlic until golden.
  • With hands gently combine meat, bacon-garlic-onion mixture, eggs, horseradish, oats, parmesan cheese, and spices. Knead gently but thoughtly until mixture is very light and fluffy.
  • Heat oven to 350.
  • Pack the mixture into 2 quart rectangular glass loaf pan, leveling the top gently.
  • Spoon tomato sauce or ketchup over the top of the loaf and sprinkle with the brown sugar.
  • Bake loaf for 1 1/2 hours. Let cool 30 minutes before slicing.
  • You can also cool completely, cover tightly in plastic wrap, chill overnight. Using thin knife, slice the loaf into thin slices for sandwiches.

  3. AMAZING. I have learned not to ask my DH what he would like for dinner as he will always say meatloaf. So when he requested it tonight I wanted to find a new recipe as im tired of my old one. AMAZING. This was so delicious. I had to hide a slice of it to send in his lunch tomorrow as the family would have eaten it all.
