  • Preheat oven to 300°F Grease an 8x8 pan with butter.
  • Put chocolate and butter in top of double boiler, stirring occasionally, until melted. Set aside off heat.
  • Beat sugar and eggs with stand or hand mixer until a ribbon forms when a spoonful of liquid is allowed to fall back into the bowl.
  • Add spoonfuls of warm melted chocolate, beating well after each addition until fully incorporated. Do not add too quickly, to avoid scrambling the eggs.
  • Sift flour, cocoa and baking powder together. Add walnuts and toss until coated.
  • Add dry ingredients to wet, and stir well until well moistened.
  • Pour batter into prepared pan. Place pan in oven. Leave oven door slightly ajar for first 2 minutes, then close door and bake 20 minutes.

I'm a 48 y/o gay Jewish man in the suburbs immediately north of New York City. I'm a general internist, practicing and teaching at a medical college north of NYC. I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
