Mom's Chicken Chimichangas

- 8 ounces cooked chicken, cubed
- 4 ounces green onions, chopped
- 8 ounces fresh tomatoes, chopped
- 1 (3 7/8 ounce) can sliced ripe olives
- 2 (4 ounce) cans diced green chilies
- 1⁄4 cup fresh cilantro, chopped
- 1 lime
- 8 ounces cream cheese
- 8 medium flour tortillas
- 4 tablespoons olive oil, divided
directions
- Combine chicken, green onion, tomatoes, olives, chilies and cilantro. Sprinkle with juice from lime.
- Slightly warm the tortillas and then the cream cheese in microwave.
- Place 1 oz "slice" of cream cheese in center of each tortilla, spoon 1/8th of the chicken mixture over the cream cheese into center of tortilla. Wrap like a burrito, folding ends shut. Optional: use a toothpick to hold tortilla shut.
- Fry over medium high heat in a little oil, until lightly brown and warm in center. Continue to add oil to pan as needed.
