Mom's Enchiladas

- 1 lb ground beef
- 1⁄2 cup chopped onion
- 1 (10 ounce) can enchilada sauce
- 1 (10 ounce) can cream of mushroom soup
- 1⁄3 cup milk
- 2 tablespoons chopped green chilies
- corn tortilla
- 1 (8 ounce) package cheddar cheese
directions
- Brown hamburger with onions and green chilies. Drain grease. Mix in the rest of the ingredients except for the cheese and the tortillas. Warm tortillas in the microwave to make them soft so they will not crack when they are rolled. Fill each tortilla with sauce/hambuger mix and cheese. Fill entire pan. If there is left over cheese and sauce spread it over the top of all the rolled tortillas. Bake at 350 until all of the cheese has melted.

I'm a college student who is not going to gain the "freshmen 15." I enjoy cooking and I can't stand to eat out a lot. It just makes me feel so unhealthy. My favorite thing to make is desserts. I enjoy hearing how well a meal is after the hard work that is put into it. I live on a ranch so our family has always had sit down meals, which i love.
