- 354.88 ml vegetable oil
- 473.18 ml sugar
- 9.85 ml cinnamon
- 9.85 ml vanilla
- 4.92 ml salt
- 4 eggs
- 591.47 ml flour
- 9.85 ml baking soda
- 226.79 g can crushed pineapple
- 473.18 ml shredded carrots
- 473.18 ml shredded coconut
- 236.59 ml walnuts
- 170.09 g cream cheese
- 118.29 ml butter
- 453.59 g powdered sugar
directions
- Cake: Preheat oven to 350. Grease and flour a 9X13 pan. Mix wet ingredients. Add dry ingredients. Bake for 50-60 minutes until a toothpick inserted comes out clean. Cool on rack 1-2 hours. This is a very dense cake.
- Frosting: Whip cream cheese and butter together until smooth. Add powdered sugar and continue to whip until fluffy. When cake is cooled, frost cake.

<p>I am a nurse, only because there are not really any good culinary schools in my area.? I love to cook for my family and friends.? My best friend and I often bake then switch halves with the other, as we both have smaller families.? Double the yum, and easy on the pocket book too!!? :)</p>
