Mom's Favorite Fruit Salad

"Mom got this recipe from the head cook when she worked at our middle school. She has been making it for every family gathering since, and I've even sent it to school for my son's birthday treat. His teacher asked for the recipe, and all the kids ate it up! (Cooking time is Chill time)"

  • Drain juices off cans of fruit and use to cook with pudding and jello.
  • Boil the tapioca, jello and fruit juice mixture 1-2 minutes or until liquid is clear.
  • Remove from heat and add marshmallows. Stir until melted.
  • Cool.
  • Mix fruit together. Pour cooled pudding/jello mixture over fruit and chill.

  2. We enjoyed this - it was different from our usual fruit salad. I omitted the bananas and added a can of pineapple chunks instead (I used less of the drained juices). You could do this with any fruit you like. Made for Spring PAC 2010.

I'm a teacher with very little time to cook, so this website is a lifesaver when I need a good, quick, easy recipe! Luckily, my hubby and two kids aren't too picky when it comes to trying new things, so we've got some good recipe ideas from this site. My favorite dish to cook is an Asian Beef Salad . . . I'll have to post the recipe on here. It's really good. I'm famous for my lasagna, and my super easy nacho cheese dip. As I said, nothing too fancy.
