Mom's Fried Red Tomatoes

"My mom's simple recipe. Easy, great and tasty! Please remember the nutritional facts are not correct, because you are not eating all the coating ingredients. Also, these amounts are to my families tastes, adjust to your liking. REMEMBER: TO ADD MORE BUTTER AND OLIVE OIL TO THE PAN AS NEEDED. THERE SHOULD ALWAYS BE A LAYER OF LIQUID TO FRY IN."

  • 3 large tomatoes (not to ripe because you want them to hold up during cooking)
  • 1 12 cups flour
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 teaspoons seasoning salt (I use Lowery's)
  • 1 tablespoon butter (per frying batch- maybe 3 Tbsps. needed total)
  • 1 tablespoon olive oil (per frying batch- maybe 3 Tbsps. needed total)

  • Cut tomatoes into thick slices. Put aside.
  • Mix flour, salt and pepper in shallow dish for coating.
  • Heat butter and olive oil in pan, until it's hot enough to fry inches.
  • Pre-heat oven to warm setting. (Lowest setting).
  • Coat tomato slices in flour mixture.
  • Place in pan until gloden brown.
  • Place on baking sheet and place in warm oven until ready to serve. (I think they taste better if put in the oven for a little bit because it crisps them up a bit.).

  1. Excellent!!!!!!!!!! after i fried them i put them in a greased baking pan and sprinkled parmasean cheese on the tomatoes and put it in the oven until the cheese melted.

  3. After I have fried them I pour a can of evaporated milk in and simmer. Serve over toast. Great summer meal!

Well, as everyone says....I love to cook. I have been cooking since I was 8. My mom and aunt are the people that taught me to cook and I have only used that knowledge to expand my techniques and palate. I love trying new recipes and cooking for my friends. Most of my friends eat things out of a box or can cook very little. It's so much fun to be able to cook well. This site is great and when I found it I was so excited! I also love to bake and am very talented when it comes to apple pie and cupcakes! I have a wonderful boyfriend that will try all of my creations, 2 cats who I love and a great family that loves to eat. I work full time so, being able to plan meals ahead of time is great and this site allows me to make my shopping list very easily. I love to cook, horseback ride travel, crochet and to watch chick flicks. My favorite cookbook would have to be the original Martha Stewart. She taught me how to make a mean, flaky pie crust! Thanks Martha!
