Directions

  1. Puree 1 onion, 1 green pepper, 1 cucumber, 1 clove garlic and 4 tomatoes in a blender.
  2. In a very big bowl, mix together oil, vinegar, tomato juice, salt and pepper. Add the mixture in the blender to this and blend well.
  3. Chop remaining onion, cucumber, and green pepper. Serve this on top of each bowl of soup and garnish with croutons.
  4. Serve ice cold.
