4 lbs beef roast
2 onions, sliced
¹⁄₂ cup ketchup
¹⁄₂ cup water
¹⁄₂ cup sherry wine
1 minced garlic clove
¹⁄₂ teaspoon dry mustard
¹⁄₂ teaspoon marjoram
¹⁄₂ teaspoon rosemary
2 bay leaves
14 ounces diced tomatoes
3 tablespoons tomato paste
2 lbs red potatoes
2 cups carrots

directions

Heat a skillet and brown the roast on both sides. Transfer to the crock pot.
brown the sliced onions in the remaining beef fat in the same skillet. Transfer to the crock pot.
Place the next 10 ingredients (ketchup through tomato paste) into the skillet and boil until the alcohol has boiled off (a few minutes). Pour this sauce into the crock pot.
Add the potatoes and the carrots to the crock pot and cook on low setting for about 8 hours.
