- 4 lbs beef roast
- 2 onions, sliced
- 1⁄2 cup ketchup
- 1⁄2 cup water
- 1⁄2 cup sherry wine
- 1 minced garlic clove
- 1⁄2 teaspoon dry mustard
- 1⁄2 teaspoon marjoram
- 1⁄2 teaspoon rosemary
- 2 bay leaves
- 14 ounces diced tomatoes
- 3 tablespoons tomato paste
- 2 lbs red potatoes
- 2 cups carrots
directions
- Heat a skillet and brown the roast on both sides. Transfer to the crock pot.
- brown the sliced onions in the remaining beef fat in the same skillet. Transfer to the crock pot.
- Place the next 10 ingredients (ketchup through tomato paste) into the skillet and boil until the alcohol has boiled off (a few minutes). Pour this sauce into the crock pot.
- Add the potatoes and the carrots to the crock pot and cook on low setting for about 8 hours.
