  • in med saucepan, mix 1 1/4 cups sugar, flour, salt and cocoa.
  • gradually add milk.
  • cook and stir over med heat till thick and bubbly.
  • reduce heat.
  • cook and stir 2 minutes more.
  • remove from heat.
  • beat egg yolks lightly.
  • gradually stir 1 cup of hot mixture into yolks, then stir egg mixture into saucepan.
  • bring to a gentel boil, cook at stir 2 minutes more.
  • remove from heat.
  • stir in butter and vanilla.
  • cover and cool with plastic wrap touch the surface - to keep a skin from forming.
  • meanwhile, beat egg whites with vanilla and cream of tartar until soft peaks form. continue to beat, gradually adding 1/2 c sugar until stiff peaks form.
  • pour chocolate filling into pre-baked pie shell. cover with meringue, sealing edges.
  • bake at 350 for 12-15 minutes.
