Mom's Secret Ingredient Meatloaf

"My mother made the best meatloaf in town, but would never share her recipe saying it was just a basic meatloaf recipe with a "secret ingredient".   • 2 - 2 12 lbs ground chuck
  • 1 large egg
  • 1 cup finely chopped onion (, or you can use 2-3 Tblp dried onion flakes if the kids object to actually seeing the onion)
  • 1 cup milk
  • 3 pieces bread, crumbed in food processor
  • 1 teaspoon salt
  • 18 teaspoon pepper
  • 13 - 12 cup Heinz Chili Sauce (NO SUBSTITUTION on this ingredient)
  • Topping

  • 12 cup catsup
  • 12 1/2 cup shredded mild cheddar cheese or 1/2 cup shredded monterey jack cheese

  • Mix ground chuck with breadcrumbs.
  • (extra lean works well too).
  • Add salt,pepper and egg.
  • Mixing with you hands now, add the Heinz Chili Sauce and the milk.
  • Seperate the mixture in half and form 2 loaves.
  • They will both fit comfortably in a 13" by 9" pan.
  • Mix the topping together and spread on the top and the sides of the loaves.
  • Cook at 375 for one hour or 400 for 45 minutes.
  • Check for firmness.
  • Let rest for ten minutes before cutting.
  • Tips---------.
  • If you have stale bread you can lay 2 slices under each loaf and it will soak up the grease so your meatloaf is a bit leaner upon serving.
  • Also, you can use the Chili Sauce on top of the meatloaf instead of catsup.
  • This makes it spicier but my mother never did this because it would have given away her"Secret Ingredient" -- and the kids probably will like it better with catsup on top.

  1. This was delicious...I changed the recipe just a bit. I used breadcrumbs instead of bread, and we didn't use the cheese, it tasted great!!
     
  2. This just became my family meatloaf recipe. It was great tasting and very moist. I used the ketchup with cheddar cheese and we loved it. I didn't even have trouble getting the center done by doing 2 loaves in a large pan. Thanks for posting the recipe.
     
  3. Actually I rate it a 3 1/2. Meatloaf is probably one of my favorite "comfort" foods and this one was no exception. Was easy to put together, baked up nice and juicy and really tasted great. BUT thats were I have to stop. Two hours later I had the worst heartburn and indigestion of my life. Middle of the night, DH is up taking pepto bismal. It had to be the chili sauce as we are not used to it and that was the only thing that was different. The kids however with their "cast iron stomachs" had no problems. I really liked the catsup and cheese on top and will use that again with my regular recipe. Just be warned about the chili sauce.
     
  4. This meatloaf was awesome! Very moist and flavorful! The chili sauce was a wonderful addition. My husband loved it, it also makes great meatloaf sandwiches the next day!
     
  5. This was great. My husband also loved it and that says a lot. He has told me for years he doesn't like meatloaf. The only thing I will do differently next time (and there will be a next time) is chop the onion smaller. That is my preference, I think I choped them to big. Sense there is just the two of us, I have left over for sandwiches, YUM. And a whole meatloaf for the freezer for later this month. Now how can you meat that. Iva

  1. This was very good. I did make a few changes to suit my familys tastes: C. dried Italian seasoned bread crumbs, t. granulated garlic (or 2 minced garlic cloves), a minced onion and substituted ketchup for the Chili sauce (I know that was the secret ingredient). Also, I added the toppings the last 10 minutes of cooking (used ketchup and sliced cheddar cheese). This recipe came out moist and tender. I am looking forward to what little leftovers there were for a sandwich. I served this with Roasted Green Beans #133821 and a green salad. I will definitely be making this again. Thank you for a great recipe.
     
  2. Delicious, This is the BEST Meatloaf I have EVER made (DH said so also). It is the only one I will use from now on, So moist and tasty. I cut the size of the recipe down abit but used 1/3 cup chili sauce , was great.. Used ground Turkey instead of beef, seasoned breadcrumbs. Catsup and mexican blend cheese for thr topping, Next time I will try the chili sauce instead of catsup. Thank you hopeful for posting your Mom's meatloaf recipe.
     
  3. This meatloaf is very, very good. I loved the addition of the "chili sauce". I used a combination of both ground beef and ground pork. (that is normally how we like our meat loaf) I used bread crumbs instead of the fresh bread in the food processor. I made it in a 9 x 9 glass pan, and it worked great. I also did the stale bread trick on the bottom, and I was very impressed on how that worked. The ketchup and cheddar chesse of the top was impressive to the kids. Thanks so much for this recipe, I will make this again!!
