Mom's Sugar and Spice Cutouts

- 2⁄3 cup unsalted butter (no substitutions)
- 1 1⁄2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 4 cups cake flour, sifted
- 1⁄2 teaspoon salt
- 2 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon ginger
- 1 teaspoon nutmeg
- 1 1⁄2 teaspoons cinnamon
- 4 teaspoons milk (low-fat is fine)
directions
- Cream together the butter and sugar and beat until light and fluffy.
- Add eggs and vanilla to the butter mixture and mix well.
- Sift together dry ingredients and spices. Add this to the creamed mixture alternately with the milk until it forms a stiff dough.
- Form into a log and wrap in wax paper. Chill for a minimum of 2 hours to overnight.
- Dust rolling mat with a bit of cake flour and take a portion of the dough log and roll out to 1/4 inch thickness. Using the cookie cutter design of your choice, cut out cookies and place on a lightly greased (or use parchment paper) baking tray.
- Bake at 375F for 8-10 minutes. Allow to cool 5 minutes before removing to a cooling rack to cool completely.
- Optional - lightly frost or ice the cookies to your liking. I also love these cookies just as is so the spices shine through.
