Mom's Tater Tot Meatloaf

"This is one of my family's favourite meals, as it was for me when I was a child. Potatoes cook right on top of the meat, so it's easy for Mom, and the kids love the way it looks."

 1. This is a great tatortot casserole recipe. I've haven't made this in quite some time and so when I ran across it while scouring your recipes I knew it was time. My recipe uses just plain hamburg as a base and so this one is a nice change as it adds more flavor and definitely something that I want to make again. I also added a can of greenbeans on top of the meat b/f adding the tots, just to give the family the veggie they need. Corn or any other veggie would work equally as well. Glad I made this as a tribute for Cook-a-Thon for ChefDee!!

 2. Spiced up the meatloaf a little more, but otherwise great idea especially for little ones.

 3. This was very easy to make. However I think next time I will spice it up just a little but I can see that it is a great recipe for children as is. Into my 'keeper' file it goes. :)

My mother was known for her cooking and baking and I am so happy that I was able to pick up her great skills.

I enjoyed many years as a stay at home Mom, whipping up all sorts of large meals and baking of all kinds. Time does not permit many hours in the kitchen anymore, but I still like to entertain when possible and I am always searching for the latest greatest new recipe to add to my tried and true collection.
