- 1 cup rolled oats (quick or instant also work)
- 1 cup boiling water
- 1 tablespoon brown sugar
- 1 egg
- 2 tablespoons plain yogurt (heaping tablespoons) or 1/4 cup buttermilk
- 1⁄2 cup milk
- 1⁄2 cup flour (white, wheat, or a mixture)
- 1 teaspoon baking powder
- 1 tablespoon oil
directions
- Soak oats in a cup of boiling water or hot tap water with a tablespoon of brown sugar.
- Beat in the egg.
- Add yogurt or buttermilk, milk, flour, baking powder, and oil (if desired, little or no oil is needed for cooking).
- Cook on a fiery hot griddle. When bubbles start to form, it's time to flip to the other side.

First, thanks so much for the detailed instructions & helpful hints in the intro. Things like that may seem small but they are SO helpful! I really liked these pancakes. I didn't use any brown sugar, adding a small amount of Splenda instead, and addd a very yummy amount of cinnamon. I used rolled oats, hot water, applesauce for the yogurt & oat flour for the flour ingredient. I used about half the amount of milk listed, since I do enjoy a nice thick pancake. At first, I didn't use my stick blender, but it didn't turn out that great. Next pancake, I did use it & it really made a big difference in the look, texture & taste (to me, at least!) They're not sweet, but bananas & sugar free syrup make it work great. Thank you very much for sharing; I love oatmeal pancakes & loved trying this out. Next time I'm going to spread on some natural peanut butter for nuttiness & extra protein.
