Morning Glory Breakfast Bars

- 2 cups all-bran cereal (All-Bran or 100% Bran Cereal)
- 1 1⁄2 cups shredded carrots (about 3)
- 1 cup milk
- 3⁄4 cup crushed pineapple, drained
- 1⁄2 cup plain yogurt (not fat-free)
- 1 1⁄2 cups whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 egg
- 1⁄2 cup liquid honey
directions
- Preheat oven to 375°F Line a 13x9-inch metal baking pan with foil, leaving a 2-inch overhang at each end. Lightly butter foil.
- In a bowl, combine bran cereal, carrots, milk, pineapple and yogurt; let stand for 5 minutes. In a large bowl, combine flour, baking powder, cinnamon, baking soda and salt. Whisk egg and honey into milk mixture. Pour over dry ingredients and stir just until mostened.
- Spread into prepared pan, smoothing top. Bake for about 30 minutes or until a tester inserted in center comes out clean. Let cool completely in pan on rack. Using foil overhang as handles, remove from pan and cut into bars.

Good recipe, we enjoyed these, except I thought the carrots could be reduced, just to get more pineapple flavor (personnal preference). Going on a field trip, with the kids tommorow, and made an extra batch, for a light snack for them. Forgot love the whole wheat flour here too. Thanks for the recipe. Made for PRMR tag.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
