Moroccan Peas & Eggs

ingredients
- 1 (8 1/2 ounce) can sweet peas, drained or 9 ounces frozen peas
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1⁄4 - 1⁄2 teaspoon black pepper
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ginger
- 2 -3 eggs
directions
- Place the peas, oil, & spices in a small frying pan. Cook over medium heat for 5 minutes.
- Scramble the eggs & add it to the peas. Cook until the eggs are dry & firm.
- Serve with thick bread.

While I liked this, I found the spices to be a bit overpowering for my taste. I added a tablespoon of mayo to hold it all together and dull the spices a bit and it was perfect like that - although not as healthy! Next time I'll omit the salt altogether, and maybe cut back a bit on the cumin, too. Thanks for this great recipe.

This is definitely "weird" - yet that's the type of food I love. Other than for using frozen peas, I made as directed and served on toasted English muffins for a late breakfast/early lunch; this is definetly too big as a snack for me! This came out way too salty for my tastes, so I would season with salt and pepper after serving and not while cooking. Thanks, Nasseh. Made for Zaar Stars.

Very unique, yet tasty. This made two good size servings. Made using frozen peas as I just hate the texture and taste of canned peas, also used 3/4 cup eggbeaters which is equal to three eggs. Did not change the spice or the cooking method as the cooking method is a big part of this recipe. This was a nice change of pace. Thanks so much for the post.
