- 8 medium potatoes
- 16 slices bacon
- 1⁄2 cup chopped onion
- 2 tablespoons all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon celery seed
- 1 1⁄2 teaspoons salt
- 1 dash pepper
- 2⁄3 cup vinegar
- 1⁄2 cup water
directions
- Boil potatoes till tender. Drain and Peel.
- Pour off all but 4 tablespoons bacon fat; add onion and cook 1 minute.
- Blend in flour, sugar, celery seed, salt, and pepper.
- Slowly add in vinegar & water; cook and stir till thick.
- Add crumbled bacon.
- Pour dressing over peeled, sliced potatoes.
- Sprinkle 2 tablespoons chopped parsley.
