  • Boil potatoes till tender. Drain and Peel.
  • Pour off all but 4 tablespoons bacon fat; add onion and cook 1 minute.
  • Blend in flour, sugar, celery seed, salt, and pepper.
  • Slowly add in vinegar & water; cook and stir till thick.
  • Add crumbled bacon.
  • Pour dressing over peeled, sliced potatoes.
  • Sprinkle 2 tablespoons chopped parsley.
