Directions

  1. Preheat oven to 375°F.
  2. Heat oil in a large skillet.
  3. Add butter.
  4. When butter is partially melted, stir in mushrooms.
  5. Cook, stirring, until mushrooms begin to brown and butter is completely melted.
  6. Add pepper and cook, stirring, 2 minutes.
  7. Add potatoes and stir well.
  8. Stir in Italian dressing, garlic powder, and paprika, and remove from heat.
  9. Spread potato mixture in a single layer in a 9"x13" baking pan.
  10. Sprinkle cheese over the top.
  11. Roast for 60 minutes, turning if desired.
