- 1 box lemon cake mix
- 1 (3 1/2 ounce) package instant lemon pudding mix
- 1⁄4 cup oil
- 2 eggs
- 1 cup Mountain Dew soda
directions
- Mix all ingredients together.
- Pour into a greased and floured bundt pan and bake at 350 degrees for 35 to 40 minutes.
- Cool in pan for about 10 minutes, then remove.
- Sprinkle with powdered sugar before serving.

I tried this recipe after reading it in the Paula Deen magazine this summer. Paula's proportions are a tad different from the one posted here (cake mix, pudding, one CAN of Mountain Dew, 3/4 c oil, and 4 eggs) but it makes one helluva moist cake! My only conundrum was what to put on top -- first I tried nuking a tub of ready made lemon frosting and drizzling on cake top. Too sweet. Then I made a chocolate version of the cake (with root beer as the soda) and just sprinkled powdered sugar on top -- it was okay but kind of boring (though it looked beautiful). Need to figure out a better way to jazz it up. The lemon cake is great for summer/warm weather and it's a snap to throw together. Will definitely experiment with other cake/pudding/soda flavors and see what great combos I can come up with.
