ingredients
- 1 (14 1/2 ounce) can diced tomatoes with green chilies, slightly drained (Rotel)
- 1 jalapeno pepper, diced
- 1⁄4 cup red onion, diced
- 1⁄4 cup green pepper, diced
- 1⁄2 of a peach, peeled and diced
- 3 large basil leaves, diced
- 1 teaspoon fresh parsley, diced
- 1⁄2 lime, juice of, of a
directions
- Combine all ingredients.
- Serve chilled.
- Note: Best when allowed to chill a couple of hours.

I made this for an extra recipe for the Genies of Gourmet ZWT 5 and we liked it very much. I did end up adding a small measurement of Splenda because we thought it was good, but needed something else. This made it just right for our family. The peach is a nice change of pace and I liked being able to make a unique salsa at home. It was enjoyed by the entire family, though I did hold it easy on the jalapeno because our Rotel's were exceptionally hot. Thanks for sharing your creation with us and keep on bringing them to the table. =)

I made this salsa to take to a Memorial Day party at my family's house. It was well-received. The peach was a very nice addition. I think something more was needed, however--maybe a little sherry vinegar? If I had had a little more time to experiment, I would be better able to put my finger on it. Anyway, it was enjoyed nonetheless. Thanks, Mr. Jim! Made for ZWT5.
