Mrs. Beasley's Four Bean Salad

"Mrs. Beasley often brought this to church potlucks when I was a kid. She was our school (Cherry Valley Brethren Elementary) janitors wife and a kind, quiet woman. I think of her when I make this. She had Celiac Disease so there is no wheat/gluten in this dish. One of my favorite things in this recipe is the way the onions take on that sweet pickled flavor and get milder with setting. Mrs. Beasley used only 1/2 teaspoon dill seed but I like it better with more. The sugar may be modified to your taste."

  • Put the oil, sugar, vinegar, salt and dill seed into a well sealed Tupperware/Rubber maid type container and shake well.
  • Add the remaining ingredients and shake again.
  • Chill overnight.

I enjoy cats, cooking, art, oil painting. I enjoy watching The Aqua Teen Hunger Force Show with my youngest son who is going away to Cal Polly San Luis Obispo this fall. Our oldest son is in graduate school at Cal State Long Beach. Go Beach! We will be empty nesters and I feel ambivalent about it. My passion has been my family but I look forward to more time for my art work. I love having a garden and I can't hardly eat a store bought tomato. We "home church" as we can't find a church that we feel good about anymore. We're not into the market driven model and believe that if you have to trick people to come it dosn't really leave room for God to work in their lives.
