  • Put the oil or butter at the bottom of a coffee mug and zap it to melt it (this also coats the mug so the muffin doesn't stick).
  • Stir the rest of the ingredients into the mug until smooth and microwave 1.0 to 1.5 minutes, or until the top is no longer wet.
  • I ran a knife around the edges to free it up and it just pops out onto the plate.

  • *You can add ¼ cup chopped pecans, walnuts, strawberries, blueberries, dark choc. chips.).
  • *SAVORY version: also add 1tsp dried garlic,onion powder, parmesan cheese or rosemary.

  1. This was great. I'm full up paleo, so this was perfect, My wife is not paleo, but she loved it too. I substituted 2 tbl of honey for the sweetener, and added 2 tbl cocoa powder, substituted cran-raisins for the blue berries, and topped with chopped walnuts. This will be my go-to treat to have with coffee on weekend mornings. Caution: Use a very tall mug and make sure the sides are coated with the butter or oil.
