Muffin Tin Apple Pancakes

ingredients
- 29.58 ml butter
- 2 apples, peeled and sliced
- 59.14 ml brown sugar
- 14.79 ml lemon juice
- 2.46 ml cinnamon
- 157.80 ml all-purpose flour
- 73.94 ml sugar (or we've used Splenda)
- 29.58 ml butter
- 2.46 ml salt
- 3 eggs
- 177.44 ml milk
- Pam cooking spray, for spraying
- icing sugar, for dusting
directions
- Preheat the oven to 350 and grease a muffin tin with Pam.
- Saute in a saucepan the 1st amount of butter, apples, brown sugar, lemon juice and cinnamon until the apples are a little soft.
- Divide the apples among the muffin tins.
- Combine the remaining ingredients in the blender then pour over the apples in the muffin tins.
- Bake until cooked through (about 10 minutes at mom's house!).
- Serve dusted with a little icing sugar!

These were very good, but I don't think they came out like they were supposed to. The apples stayed at the bottom of the tins and didn't rise to the top so when I was removing them, a lot of the apple filling was still in the muffin pan and not in the muffin. I also had to cook them a lot longer than 10 minutes. Probably closer to 20 - 25 minutes. These were very good though and definitely a treat for breakfast. I will add another apple to the recipe next time. I will also pour a little batter into the muffin tin before adding the apples to insure that they won't be on the bottom and then pour a little more batter on top. They were very pretty sprinkled with the powdered sugar! Thanks for posting this great idea!

These were something different and very good! I think I may have added a full cup of milk, rather than the 3/4 c called for, but they were still fabulous! Mine came out with a custard-like texture, and had plenty of apples in them. (I used two large apples).The butter should be melted, I believe, before adding to the blender. You could also substitute oil, as I chose to do. I really enjoyed the change of pace. Thanks for sharing!

<p>I'm a good ol' prairie girl from Canada with one side of the family being Ukrainian/Slovakian and the other side is German/Russian. In other words, when we cook we take carbs, cover them in more carbs, fry'em and serve it smothered in onions and cream. <br />No pro chefs in my family, just grandmas and aunts and cousins and a mom that had me pinching perogies and stuffing strudel before I could form a complete sentence. <br />The most dreaded / laughed at phrase I say is, So last night, I invented this thing for supper... - I would probably publish more recipes if I actually remembered everything I put in or had an idea of how much I added!!</p>
