  • Into potatoes, mix egg, salt & pepper, onion & garlic powders.
  • Shape potatoes (1 cup at a time) into a ball shape around cheese cubes. Roll in bread crumbs.
  • Heat oil in pan and brown all sides of croquettes until golden.
  • Heat through in microwave until cheese is melted (40 seconds on high in my micro.).
  • Eat plain or dip in sauce.
  • *Note: please remember microwave times vary.

Why "SoupCookie"? My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
