  • Mix dry ingredients.
  • Add beaten eggs and butter or oil.
  • Add the milk.
  • Put on spoonfuls onto greased hot griddle or frying pan.
  • Turn when'bubbles' appear.
  • Remove from pan and place on wire racks.

  5. * Please note the quotation marks around the word 'Scotch' these pancakes are a Scottish recipe, Scotch Pancakes is the name my mother chose to gave them because her Canadian friends did not know the difference. They DO now! =)

Tweaks

  1. Wonderful recipe Evie*! I made these for a light dinner this evening. I added mashed banana, a bit of vanilla extract and instead of white sugar I used brown sugar & 3/4 c *egg beaters* in place of the eggs in the pancake batter. I also added some pecan pieces and made a homemade warm syrup to top with. Thank you for sharing!
