  1. These are an awesome, healthy, crunchy snack! My toddler loves them! Play around with the amount of oil you use and how long you bake to get the texture you like. I've found if you use too little oil, they are a dry crunchy that turns a bit sandy in you mouth. Too much oil, and you have to spread them on paper towels to soak it up. You basicly are frying them in the oil in the oven. I double the lentils but still only use about 2-3 T of oil and bake for about 45 minutes, stirring every 10-15. If you find you didn't get them crunchy enough after cooling, just pop them back in and they will crisp up for you. Everyone I've shared them with (and that's a lot), likes them!

  2. I was very skeptical but I had some lentils I had to use up today so I gave this a shot and I'm so glad I did! Love it!! They taste like unpopped popcorn kernel, which I LOVE but I hate eating because I'm always worried I'll break a tooth. These are great, thanks for sharing the recipe :)

  3. What a great snack! I added a 1/2 tsp of fenugreek and a 1/2 tsp of tarragon just for fun. These really turned out well. GREAT flavor.

  4. Wow! These are great! Lentils really help my blood sugar and I'm always looking for creative lentil recipes. These sure fit the bill! I put a tablespoon of olive oil into the water instead of tossing them, and I used a Sil-Pat, so there was no sticking at all. And I just used salt and cayenne pepper. They took about 30 minutes to cook. My 5 kids loved them too!

  5. Yum! I have recently become a "lentil-a-holic" and these are a great new addition to my growing lentil recipe box. I'm not a curry fan, so I did garlic, cumin, sea salt, onion powder, and a little cayenne pepper. Also, I added the spices before the oven accidentally, and it still turned out great! This makes me want to try to roast all types of other beans/legumes and to try different seasonings!

Tweaks

  1. These are great! Mine didn't get to the point of "crispy". Some are crunchy while some are still slightly chewy. The taste is good though. I used a few sprays of cooking spray instead of oil. That made them one point for a whole cup. :) Great snack for someone counting points! Thanks!

  2. Great snack! I will definitely been sneaking these into the movie theatre. A longer cooking time is best (30-45 minutes) - if you want them crunchy. I also recommend substituting the coarse salt for cajun seasoning. It gives it a nice kick and already has salt in it.

  3. These are great! I also used spray instead of oil and used cajun seasoning. I left mine dry overnight before I threw them in the oven and was just amazed at how crunchy they are. Thanks for such a simple but good recipe
