  • Heat the olive oil in a small saucpan, add the mushrooms and fry gently for about 5 minutes or until softened.
  • Add the garlic and the parsley, season with pepper and leave to cook for a few minutes in their own juices.
  • Gradually add the flour, stirring constantly, then enough water to make a thick, creamy sauce.
  • Served with grated parmesan if you wish.
