  • Puree the mushrooms, apple, mint and seasoning in a food processor.
  • Tie the chops into neat rounds and pan fry in butter for 1 minute on each side; allow to cool.
  • Roll out pastry and cut into large squares allowing 1 square per chop, remove string and top each chop with some of the mushroom puree.
  • Wrap the chops in the pastry and refrigerate for 1 hour.
  • Glaze with beaten egg and bake at 350 degrees for 25 minutes or until cooked.
