Mushroom and Lamb Parcels

Ingredients Nutrition
- 250 g mushrooms (8 oz.)
- 1 apple, peeled and cored
- 4 sprigs mint
- seasoning
- 1 1⁄2 kg loin lamb, chops. boned (3 lb.)
- butter (for frying)
- 1 (17 1/3 ounce) box frozen puff pastry
- egg, for glazing
Directions
- Puree the mushrooms, apple, mint and seasoning in a food processor.
- Tie the chops into neat rounds and pan fry in butter for 1 minute on each side; allow to cool.
- Roll out pastry and cut into large squares allowing 1 square per chop, remove string and top each chop with some of the mushroom puree.
- Wrap the chops in the pastry and refrigerate for 1 hour.
- Glaze with beaten egg and bake at 350 degrees for 25 minutes or until cooked.
