  • Add garlic and shake pan, cooking another minute; douse pan with sherry.
  • Reduce sherry by half, cooking another minute or two, shaking pan frequently.
  • Sprinkle with salt, pepper, and a handful of parsley.
  • Turn off heat and let stand till ready to serve.
