- 1 ounce butter
- 1 tablespoon olive oil
- 3 1⁄2 ounces chestnut mushrooms, sliced
- 2 ounces Baby Spinach
- 4 eggs, lightly beaten
- 2 ounces sharp cheddar cheese, grated
- salt and pepper
directions
- Preheat the broiler. Heat the butter and oil in a nonstick pan. Fry the mushrooms for 4-5 minutes. Add the spinach and cook for 1 minute. Set aside.
- Add the eggs to the pan, season. Cook for 4 to 5 minutes until the underside is golden and the egg is almost set, then scatter the mushrooms, spinach and cheese over.
- Cook under the broiler until the cheese has melted. Cut in half and serve with crispy fried potatoes.
