- 2 tablespoons butter
- 1⁄4 cup chopped onion
- 1⁄2 cup chopped green bell pepper
- 1 (8 ounce) can sliced mushrooms
- 1 cup rice
- water
directions
- Melt butter in a saucepan. When foaming subsides, add onion and green pepper. Saute until limp and onion is translucent.
- Drain liquid from mushroom can into 2-cup measure. Add water to bring volume up to 2 cups. Add mushrooms to saucepan and saute 1 minute.
- Add rice and liquid. Cover tightly and cook 30 min or until rice is tender.
