- 1 cup dried mushroom
- 1 cup sliced mushrooms
- 1 onion, chopped
- 1⁄2 red bell pepper, chopped
- 2 garlic cloves, minced
- 1⁄2 cup seasoned dry bread crumb
- 1⁄2 cup minced parsley
- 1 teaspoon dried thyme
- 1 1⁄2 lbs london broil beef
- 1 tablespoon vegetable oil
- 1⁄4 cup dry red wine
directions
- Preheat oven to 325.
- In a medium bowl, combine the dried (reconstituted) and fresh mushrooms, onions, pepper, garlic, bread crumbs, parsley and thyme.
- Cut the beef in half, to make it have of the thickness spread it open like a book.
- spread the beef mixture evenly on beef.
- Starting from the short end roll up like a jelly roll and tie with kitchen string.
- In a nonstick pan heat the oil and cook the roll until brown.
- transfer to a baking dish, add the wine and place in the oven.
- Bake covered at 325 until cooked through about 1 hour.
