Mushrooms Filled With Crabmeat

  • Preheat broiler.
  • Remove stems from mushrooms and save for another use.
  • Combine crabmeat with cream, cheese and seasonings.
  • Fill caps with mixture, mounding just slightly
  • If mushrooms do not sit flat, slice a small piece off the bottom.
  • Make buttered breadcrumbs by melting butter in a small saute pan
  • Add breadcrumbs and salt and saute until golden, 2-3 minutes stirring regularly.
  • Sprinkle crumbs over top of mushrooms and press gently.
  • Transfer mushrooms to a small baking sheet with sides, then set under broiler 3-5 minutes or until mushrooms are heated through and crumbs are browned.
  • Serve immediately.

  1. I liked this recipe, but it just didn't quite get there. I followed boomette's suggestion and topped with mozzarella. Next time I think I will bake for a while before turning on the broiler. The mushrooms weren't quite heated through and tender, while the tops were browned. I didn't add the cheese to the top until the last minute of cooking, so that wasn't it. I'd also suggest adding some heat...cayenne or maybe some diced green onions. Thanks for sharing!
