Directions

  1. In a HOT pan with a lid, add olive oil, onions, garlic, chilli and bay leaves.
  2. Cook until onions and garlic are soft.
  3. Turn heat to medium high.
  4. Add mussels and white wine. Put on lid.
  5. After a few minutes WITHOUT LIFTING LID, shake pot vigorously.
  6. Turn heat to medium low and simmer for 5 minutes.
  7. Remove lid and discard any unopened shells.
  8. Stir through the basil and cream and garnish with chopped parsley.
