  1. Mix together sugar, salt, pepper, cumin and mustard.
  2. Press mixture onto fish.
  3. Heat oil in cast iron skillet over medium heat. Add fish, skin side up and cook about 4 minutes. Make sure the rub does not burn. Flip fish and cook to medium doneness, about 1 more minute.
  4. Serve.
