Mustard and Brown Sugar Salmon Rub

"This recipe is from Prevention Magazine. I wasn't sure about the mustard but we were all pleased by the results. The original recipe called for 1 1/2 tsp of salt but I used less."

  • Mix together sugar, salt, pepper, cumin and mustard.
  • Press mixture onto fish.
  • Heat oil in cast iron skillet over medium heat. Add fish, skin side up and cook about 4 minutes. Make sure the rub does not burn. Flip fish and cook to medium doneness, about 1 more minute.
  • Serve.
