Mustard and Chive Sauce

  • Melt the butter in a small pan and stir in the flour.
  • Remove from the heat and stir in the mustard.
  • Return the pan to the heat and gradually incorporate the milk, beating with a spoon as it comes up to a boil.
  • Season with salt and pepper and let simmer gently, uncovered, for 10-15 minutes.
  • This cooks the flour and thickens the sauce.
  • Stir in the chives, adding a touch of soup stock or water if it seems too thick.
  • Spoon over slices of ham.

  1. This was a very good sauce. It was very pleasing, due to the strong mustard, I think. It gave the sauce some energy which balanced well with the mild ham. I used Dijon mustard this time, but I would love to try it with the English mustard. Fresh chives is an absolute must, the only way to go! Thanks for sharing this simple, but wonderful sauce recipe.
     
  2. Used this over a ham loaf. Really perked it up! Makes a lot of sauce, so think I will 1/2 it next time. Also, think I will use a bolder mustard, because Dijon is just too salty for us. Thnx for posting Sackville.
     
  3. Very good sauce for baked ham. I did add a little more dijon mustard to suit our tastes. Also went well with the baked macaroni and cheese we had with the ham.
     
  4. This is a simple, basic sauce. I would make it again but would use a little more mustard and include a few drops of hot sauce for a little more sparkle to the recipe.
     
  5. I really liked this, but hubby and our dinner guest both said they couldn't taste the mustard. I would make it again and add more mustard. It was a very nice accompaniment to corned beef. Thanks Sackville!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
