  1. Heat the oil in a large pan over a medium heat.
  2. Add the onions to the pan and fry for 8-10min until they turn soft and golden.
  3. Smear the pork with the mustard. Push the onions to one side of the pan and add the pork.
  4. Fry for 10-15min until the meat is browned all over.
  5. Add the mushrooms and stock, season with salt and pepper then cover and cook for 30min.
  6. Add the spinach and simmer for 5min. Serve with mashed potato.
