Mustard Pork and Mushroom One Pot

  • Heat the oil in a large pan over a medium heat.
  • Add the onions to the pan and fry for 8-10min until they turn soft and golden.
  • Smear the pork with the mustard. Push the onions to one side of the pan and add the pork.
  • Fry for 10-15min until the meat is browned all over.
  • Add the mushrooms and stock, season with salt and pepper then cover and cook for 30min.
  • Add the spinach and simmer for 5min. Serve with mashed potato.

  1. I only used 5 pork chops, but they fit perfectly in my pan. I used close to the full amount of broth & about 3/4 of the other ingredients. We loved the flavor, the hint of mustard was perfect, very flavorful, I served with mashed potatoes, which I thought was perfect. Mike wants to try it with orzo next, I might humor him, but the mashed were so good, I doubt it. He can get his spinachy orzo with our regular recipe.
