ingredients
- 3 -4 large potatoes, boiled, peeled and diced
- 2 eggs, boiled and diced
- 1⁄2 cup mayonnaise
- 2 tablespoons mustard
- 2 tablespoons pickle relish
- 1⁄4 teaspoon onion powder
- 1 pinch salt and pepper
directions
- Combine all ingredients and mix well.
- Serve warm or refrigerate for 1 hour and serve cold.

My wife gave our niece her potato salad recipe, and now our niece is bringing it to a cook-out today. My wife had already boiled potatoes, so we decided to have a little competition. I substituted sliced green onions for the onion powder. Just finished and tasted it. Wonderful. Easy and good. I think my niece will be taking home a lot of potato salad, and we will have an empty bowl. thanks

This was just what I wanted to go with our burgers (Recipe #120224) last night. We usually buy mustard potato salad at the grocery store, but now that I know how easy this is, I'll be making it often. I did leave out the pickle relish because I didn't have any, but we didn't miss it. Great flavor & very easy to prepare- 4 of us scarfed down the whole bowl! Thanks for sharing!
