ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1⁄2 teaspoon salt
- 1 1⁄2 cups sugar
- 1⁄2 cup currants (raisins)
- 1⁄2 cup coconut
- 1⁄2 cup nuts
- 1 cup canola oil
- 3 eggs
- 2 cups carrots, grated
directions
- Preheat oven to 350.
- Mix dry ingredients.
- Add currants, coconut and nuts. Mix.
- Mix oil and carrots and add to dry. Mix.
- Put in loaf pan (or any shape you want). Let it stand for 20 minutes.
- Bake 1 hour.
- Cool and remove from pan.
- Keeps for 2 weeks.
