  • Preheat oven to 350.
  • Mix dry ingredients.
  • Add currants, coconut and nuts. Mix.
  • Mix oil and carrots and add to dry. Mix.
  • Put in loaf pan (or any shape you want). Let it stand for 20 minutes.
  • Bake 1 hour.
  • Cool and remove from pan.
  • Keeps for 2 weeks.
