My Cherry Clafouti

  • Oven: 180°C.
  • In a food processor grind the almonds, then add 1/2 cup of the sugar, the vanilla, flour, milk and eggs.
  • Blend it until the mixture is smooth.
  • Add the other 1/2 cup sugar to the cherries, and toss well in a bowl. Make sure all the cherry stones have been removed!
  • Use an ovenproof pie dish, and grease well with butter.
  • Spread the cherries and the sugar left in bottom of bowl all over the pie dish bottom.
  • Pour the batter evenly over the berries.
  • Bake for 45 - 50 minutes.
  • Dust with icing sugar before serving.

I was born in South Africa, but I married a Frenchman from Aix-en-Provence. We moved to Mauritius recently because he was transferred here by his bank. I have two small daughters. We are very happy on this island, a dot in the Indian Ocean. The people speak a creole tongue and French, also some English. The weather is mostly great except in hurricane season. I am now a stay-home wife and after lurking on Zaar for a long time I decided to come out of my rabbit hole and introduce myself! I have no recipes on Zaar yet but hope to post some soon. I don't have great passions because my family keeps me busy, but I love photography. I also read a lot and fortunately my relatives in S A send me books and magazines. English reading matter are not so easily available here.
