My Chicken Pasta Salad

"This chicken pasta salad is lovely served on a nice warm day. It's great as a side but makes a perfect meal on its own with some bread and wine."

  • On a plate add the tumeric, cinnamon, cardamom, cayenne and cumin.
  • Make sure to coat the diced chicken well with the spices.
  • Cover the chicken and place in fridge for 30 - 60 minutes.
  • Heat the oil and add the onions, garlic and sweet pepper.
  • Cook over low heat for 5 minutes, stir occasionally.
  • Add the chicken and cook for 5 - 10 minutes, again stirring occasionally, until a nice golden brown color.
  • Add the chicken stock and salt, bring to a boil.
  • Once boiling add the raisins, and mango, lower heat to a simmer, partially cover and simmer for 25 minutes.
  • Add the chicken mixture to your pasta, toss and serve garnished with the cilantro, almonds and candied ginger.

  1. This sounds much harder than it is! This is actually a very low stress easy recipe! I was pleasantly surprised by that since the ingredients look long as do the directions, but don't be fooled this is easy! :) This is also a crowd pleaser!   2. Ummm, delicious. I made half of this recipe as directed but I did omit the mango and candied ginger. it was a tasty and simple to made dinner last evening. The seasonings added an most welcome North African essence which I, of course, loved. Thank you for another winner BK. :D
