ingredients
- 4 cups ham, diced
- 2 hard-boiled eggs, diced
- 1⁄2 cup mayonnaise
- 1 tablespoon mustard
- 1⁄2 onion, diced
- 2 stalks celery, diced
- 1 dill pickle, diced
- 2 tablespoons pickle juice
directions
- Mix all ingredients together in a large bowl.
- Serve on bread as sandwiches, or on a bed of lettuce as a salad with crackers.

This turned out to be a nice use of leftover cooked ham. I've never been a real fan of ham salad but made this for my wife to go with a green salad for her lunch. There was some left over so I had it with crackers by itself for my lunch and it was very nice. Most ham salad recipes calls for pickle relish which my wife hates so when I saw this with dill pickles that she loves I thought I'd give it a try. I cut the recipe by half and actually added just a little too much mustard to my taste but overall it turned out well. She liked it a lot and I'll be adding it to my recipe file for future use.
