- 4 cups brown rice
- 2 cups rolled oats
- 2 lbs carrots
- 1 lb potato
- 3 lbs lean ground beef or 3 lbs cubed beef
- 6 eggs, including shells
- 1 lb green beans
- 3 zucchini
- 2 sweet potatoes
- 1 apple, NO SEEDS
- 4 cups fat-free cottage cheese
- 6 -8 cups low sodium or sodium free reduced-fat chicken broth
- 1 teaspoon garlic powder

- substitute and vary types meat, keep it lean
directions
- Prepare the brown rice and rolled oats as directed on the package. Set aside.
- Peel, cube and boil potatoes, drain and add to rice and oats.
- Bake sweet potatoes, mash and add to rice and oats.
- Scramble eggs. Take egg shells, bake at 350 for 5 min to dry them out and scrush. Add eggs and shells to mixture.
- Steam carrots, green beans, and squash until 'mushy'. I recommend using the ziplock steam bags because they retain the nutrients.
- Puree the veggies with the chicken broth and add veggies to the mixture.
- Cook the lean meat (bake, pan fry, microwave) and DO NOT DRAIN FAT, add to mix.
- Allow the mix to cool. Slice the seeded apple (apple seeds are toxic to dogs-- make sure there are NO seeds!) into very small bits. Add the apple, the garlic powder and all of the cottage cheese to the mixture and serve.
- Leftovers need to be kept in the fridge and used or frozen within 8 days.

I have learned to cook from several amazing sources. First, my lovely mother, to whom I owe credit for my ability to cook 'southern' type foods. Next, my awesome step mother who showed me favorites with an Italian twist. And finally, my friend, Dan, who introduced me to veggies I didn't know existed. He taught me many Mediteranian foods and spices that I use daily.
I am lucky to have lots of time to play in the kitchen; it's my excuse for not studying! I'm currently a nursing student, hoping to graduate in the next two years. Along with cooking, I love stamp collecting and reading. Yoga is also a favorite (very calming!)
