My Favorite Dorito Casserole

"There are a couple similar recipes posted but this is the one I always use...so quick and easy. It's simply one of my favorites. FYI if I use chicken, I usually buy the precooked rotisserie chicken and just shred it."

  • 1 lb hamburger or 1 lb chicken
  • 1 (10 1/2 ounce) can cream of mushroom soup (I use the reduced fat)
  • 1 (10 1/2 ounce) can cream of chicken soup (I use the reduced fat)
  • 1 (10 ounce) can rotel (original or sometimes I use the hotter one depends on my mood)
  • 0.5 (12 ounce) bag nacho cheese flavor Doritos
  • 2 -3 green onions, chopped, i usually omit (optional)
  • Topping

  • 1 (8 ounce) bag shredded mexican cheese (use your own judgment, I like extra cheese)
  • 0.5 (12 ounce) bag nacho cheese flavor Doritos, finely crushed

directions

  • Brown and drain hamburger.
  • Combine all ingredients except the topping ingredients. You may apply the Doritos whole, but I prefer slightly crushed.
  • Put in a 9 x 13 pan or 2 quart casserole dish.
  • Bake at 350°F for 35 minutes.
  • Remove and top with finely crushed chips and cheese bake for an addition 10 minutes.

  1. Made as directed only using regular onions cooked with the beef and after taking the casserole out topping with some green onions. The neighbor kids gobbled this down and DH and I topped our helpings with some lettuce tomatoes, homemade salsa (from the other day) and some sour cream. Delicious. Made for Spring PAC 2014.
     
  2. I was kind of nervous to try this, I was unsure about the 2 soups mixed with the can of Rotel tomatoes but I am glad I did! My husband loved this casserole, he ate 3 servings!! We had lettuce, tomatoes, salsa and sour cream with this. He said the only thing that would make it better would be some black olives to garnish. Thanks!
     
  3. I made this with ground beef last night. I made sort of a boo-boo due to the fact that my house was in UTTER chaos as I was trying to make this (lol!) I accidentally mixed 3/4 of the cheese IN the casserole instead of putting the cheese on top. If you would ever make this dumb mistake like me I would recommend that you only cook it until the edges are bubbley (about 20 mins). Due to my stupid mistake the casserole got sort of hard after it sat for about 10 mins...although we were well on our way to scarfing it up...have no fear! We scopped it with nacho chips, served with salsa and homemade guac...MUY BUENO!!!!
     
  4. I came to post my recipe for Dorito casserole but was checking the others first. I came to yours and said- that's it! Mine is similar enough that I feel comfortable attaching the review to your recipe. This is one of my fall-back comfort dishes. I sometimes use two cans of the chicken soup or mushroom- whichever I have on hand. I also add one or two small cans of tomato sauce but it is mostly for color. I use regular onions which I cook while browning the meat rather than the green onions as listed. I serve this with sour cream and extra salsa, along with salad and corn. Thanks for posting!
     
  5. What an excellent recipe! I was a little hesitant to put the chips in the casserole because I don't really like soggy chips. But, after I tasted it, I realized that's the key to the recipe! I did add the green onions. I also added a little garlic powder and used deer burger. Thanks for posting!!!
