My Favorite Taco Salad

"I usually use Doritos or tortilla chips, but Fritos corn chips are also good in this salad. You can use any variety of lettuce that you like."

  • 1 lb 93% lean ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 tomatoes, chopped
  • 1 bunch lettuce, torn into pieces
  • 1 (1 1/4 ounce) envelope taco seasoning (low-sodium)
  • 8 ounces Mexican blend cheese
  • 1 avocado, chopped
  • 1 (10 -12 ounce) bag tortilla chips, broken into pieces
  • 8 ounces Catalina dressing (I use Kraft light)

  • Heat a large skillet over medium-high heat. Add ground beef and onions and cook, breaking up any lumps of meat until no longer pink.
  • Add taco seasoning mix and 1/4 cup water. Stir and cook for 1 minute more.
  • Mix in black beans and cook until beans are heated.
  • Combine lettuce, tomatoes, avocado and cheese in a large salad bowl.
  • Add meat mixture to salad bowl and toss ingredients well with salad dressing.
  • Add in chips, toss and serve immediately.
  • Serve with additional salad dressing if desired.

  1. Made this taco salad to take to my DBIL's birthday party and it was a hit. I added the 1/4 cup of water to the ground beef and taco seasoning mixture but it still seemed to dry so I added another 1/4 cup and it was a lot better. Do be sure to rinse and drain the black beans well before adding and dont heat to long. I used plain tortilla chips and I think after adding the dressing we had a sweeter salad than what we would have had with Doritos or Fritos and the light dressing. Thank you for posting DesertRose15!
