My Grandmother's Apple Macaroon

"A apple cinnamon & pecan filling covered by a crispy crust. This is a farovite of mine that I found in my grandmothers recipe book. When I say recipe book I don't mean a store bought one. This was written in her own hand. I do hope you enjoy as much as I do."

  • FILLING

  • 4 apples (I prefer Granny Smith)
  • 12 cup sugar
  • 12 teaspoon cinnamon
  • 12 cup pecans, Chopped (I like mine coarsely chopped)
  • BATTER

  • 2 eggs, well beaten
  • 1 12 cups sugar
  • 1 12 cups flour
  • 34 cup shortening (I prefer the butter flavored type)
  • 34 cup butter, Softened

  • FILLING:.
  • Peel, core & thinly slice the apples. Place in a pie pan or baking pan. (I spray my pan with oil spray before filling however it may not be necessary.)
  • Mix together the sugar and cinnamon then sprinkle over the sliced apples.
  • Next sprinkle on the chopped pecans.
  • BATTER:.
  • Mix together the eggs, 1 1/2 cup sugar, 1 1/2 cup flour, 3/4 cup shortening and the 3/4 cup butter. Batter will be thick.
  • Spread on top of filling.
  • Bake at 300 until crust crisps approximately 45 minutes to 1 hour.
