My Polish Family's Red Beet Soup

"This is the red beet soup that I grew up eating. I make it for my family now, my mother still makes it, her mother made it, and probably her mother made it too. So very rich and good. This is comfort food for me, especially when I am homesick."

  • Place beef short ribs, salt and pepper in a stock pot.
  • Cover with water (at least 3 quarts) and bring to a boil.
  • Let simmer until the meat falls off the bone.
  • Skim off any "scum" and visible fat.
  • Add cubed red beets, ensuring that there is enough liquid to cover them.
  • Bring back to the boil.
  • Simmer until red beets are tender.
  • Take out about 3 cups of the soup mixture including red beets but excluding meat, and place in blender. Blend until mostly smooth.
  • Add the blended mixture back to the pot.
  • Add cubed potatoes and simmer until tender.
  • Add half and half, and sour cream.
  • Mix well.
  • Be certain to not let the soup come to a boil once the dairy products have been added.
  • Check for seasoning. Adjust with salt and pepper as necessary.
  • Serve and enjoy.

  1. I'm getting ready to make this soup tomorrow. My family growing up had the best Polish Beet soup (cream) and somehow we lost the recipe when my grandmother passed. One thing we knew was it had cream and sour cream and something went through a cheesecloth?? This recipe is the closest I've seen to our original. Funny I'm from Tampa and to think there was another family having the same food so close is wild to me! I thought I was the only Polish person in America or at least it felt like it! I thought we'd be related but don't recognize Colman. Thanks for saving a tradition!!

I am originally from Florida, near Tampa. I attended undergrad at the University of Tampa, and grad school at Auburn University. When I got married I moved to Wyoming. Talk about culture and environment shock!! I love animals, especially dogs. We try to get rescue dogs, particularly huskies. We currently have 2 huskies - one Siberian male and one Alaskan female. Huskies have so much personality! I am a fan of the childrens books about Winnie the Pooh. I especially love TIGGER. Actually I love just about everything Disney. One of the things I miss most from living in Florida was getting to go to Walt Disney World anytime I wanted to. It really is one of the happiest places on earth. I love to cook and am always trying a new recipe. I also like to garden, but find it quite a challenge here in Wyoming with our long winters and dry windy short summers. I like to experiment with herbs and spices. During the summer of 2006 I was diagnosed with PCOS and as such realized that the excess weight I was carrying was quite literally killing me. I found SparkPeople.com and was able to lose over 75 pounds now with not too much more to go. My cooking has changed some since then in that I still cook the same foods I just go about it in a much healthier way.
