“This recipe is basically like my stuffed cabbage recipe. The "stuffing" is the same, as is the sauce. I don't like green or any color, peppers so I make my stuffed peppers casserole style. That way I use less peppers and can remove them from my serving.”

  1. Directions.
  2. Mix soup and tomatoes and set aside.
  3. Measure out 1 1/2 cups(more or less if you prefer) cauliflower "rice" and mix with beef and seasonings.
  4. If you want to add some garlic and/or onion powder, or more rice, do so at this point. Salt and pepper to taste.
  5. Add large pieces of green pepper to bottom of lined slow cooker.
  6. Add "stuffing" and top with sauce.
  7. Cover with bacon slices and pepper caps then cover and cook on low for 6 - 8 hours.
