My "stuffed" Peppers Casserole

"This recipe is basically like my stuffed cabbage recipe. The "stuffing" is the same, as is the sauce. I don't like green or any color, peppers so I make my stuffed peppers casserole style. That way I use less peppers and can remove them from my serving."

  • Directions.
  • Mix soup and tomatoes and set aside.
  • Measure out 1 1/2 cups(more or less if you prefer) cauliflower "rice" and mix with beef and seasonings.
  • If you want to add some garlic and/or onion powder, or more rice, do so at this point. Salt and pepper to taste.
  • Add large pieces of green pepper to bottom of lined slow cooker.
  • Add "stuffing" and top with sauce.
  • Cover with bacon slices and pepper caps then cover and cook on low for 6 - 8 hours.
