- 3 cups cooked rice
- 2 tablespoons olive oil
- 1 small onion, chopped
- 1 cup frozen peas and carrot
- 2 -3 tablespoons soy sauce
- 2 eggs, lightly beaten
- 2 tablespoons green onions, chopped
directions
- Preheat large skillet with oil, add rice and warm throughout.
- add frozen peas & carrots warm throughout.
- make well in rice mixture, lightly scramble eggs and mix throughout.
- add soy sauce.
- top with green onions.
